- 1/4 cup 55 g of canola oil
- 3 medium-sized Russet potatoes peeled
- 1 large onion sliced thinly
- Salt and pepper to taste
Optional:
- 1/2 tsp 2 g of garlic powder
- 1 tsp 2 g of red pepper flakes
- 1 tbsp 3 g of chopped chives (to be added after cooking)
Heat the oil in a sauté pan or cast-iron skillet over medium-high heat.
Slice the onions and potatoes into 1/4 inch thick pieces.
Carefully add the sliced potatoes and onions to the hot oil and season with salt and pepper.
Add the garlic powder and red pepper flakes if desired.
Cook, stirring frequently, until the potatoes and onions are browned and tender, about 10-15 minutes. Covering the skillet during cooking can help to achieve a creamier texture.
Transfer the cooked potatoes and onions to a paper towel-lined plate to drain the excess oil.
Sprinkle the chopped chives on top and serve.
