Slow Cooked Chicken with Bell Peppers





This recipe is so simple and if you have a busy day and you just want to make something easy, why not add the following ingredients to your slow cooker, and let dinner take care of itself? Seriously, it is that easy. You just have to chop the ingredients, add them to your crockpot, and let the machine work its magic. To serve this delicious boneless chicken recipe, you just have to decide whether to ladle it over rice or noodles and grate some cheese on top. That is all there is to it.

This recipe is wide open to interpretation, so use your inspiration to make it your own. Perhaps you have some carrots or mushrooms to use up, in which case throw them in. Maybe you have a fondness for Mozzarella or Cheddar and these would be fine to use instead of the hard cheese called for in the recipe. Use the recipe as a guideline and liven it up however you see fit. If you have some veggies to use up, use them in this recipe. If you want to switch the herbs for others, go ahead. You can even liven it up with the addition of a little chili powder, some chopped fresh chilies, or Tabasco sauce.





This recipe is kid-friendly (as long as you leave out the above-mentioned chilies!) and smothering food in cheese is a great way to tempt them to eat it. Not many kids enjoy broccoli, for example, but cover it in a cheese sauce and suddenly it looks tempting. The same is true with this healthy chicken and bell pepper recipe. The grated cheese on top melts attractively over the dish and will tempt your little ones to clean their plates and maybe even ask for a second helping.

Ingredients –

  • 4 skinless, boneless chicken breasts, in bite-sized pieces
  • 1 bay leaf
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • 16 oz can chopped tomatoes
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • 2 chopped garlic cloves or 2 teaspoons garlic powder
  • 1 diced yellow onion
  • ½ teaspoon red pepper flakes
  • ½ teaspoon dried thyme (optional)
  • ½ cup grated Romano or Parmesan cheese

Preparation:

Stir the chicken, bay leaf, bell peppers, tomatoes, herbs, salt, garlic, onion, and red pepper flakes together in your slow cooker.

Cover and cook on low for about 7 hours. Leaving it for anywhere between 6 and 8 hours yield good results.

Remove the bay leaf and divide the chicken mixture between 4 bowls. Sprinkle the grated cheese on top and serve.
