Ingredients





  • ½ cup onion, chopped
  • ½ cup celery, chopped
  • 2 garlic cloves, minced
  • ¼ cup butter
  • ½ cup all purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 4 cups chicken, cut into large chunks
  • 2 cups buttermilk biscuit mix
  • 2 teaspoons dried basil
  • ⅔ cup milk
  • Flat leaf parsley, chopped for garnish

Preparation:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large saucepan sauté the onions, celery, and garlic in the butter until aromatic and tender. Add in the flour, sugar, salt, basil, pepper, and chicken broth and bring the mixture to a boil. Cook for 1 minute then add in the carrot slices and cook for another 3 minutes stirring often. Add in the pieces of chicken and remove from the heat.
  3. Grease the bottom and sides of a large baking dish and place the mixture inside.
  4. Prepare the dumplings by combining the biscuit mix, basil, and milk in a bowl. Use a fork until the mixture is well moistened. Drop by tablespoonfuls around the outside of the casserole to make 12 dumplings.
  5. Bake for 25 minutes uncovered or until the chicken is no longer pink inside. Then cover the baking dish and bake for another 5 to 10 minutes or until the dumplings are done.
  6. Sprinkle parsley on top of the chicken and vegetables and serve.
