- 3 cubed boneless skinless chicken breasts
- 1 diced onion
- 2 minced garlic cloves
- 2 large cans drained white beans
- 1 large can drained pink beans
- 2 small cans diced green chilies
- 1 cup whole kernel corn
- 2 cups chicken broth
- 1 minced jalapeno pepper
- 2 teaspoons cumin
- 1 teaspoon chili powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cups crushed tortilla chips
- 2 cup shredded pepper jack cheese
Cut the boneless skinless chicken breasts into bite size cubes. Add them into a large crockpot. Add the diced onion, minced garlic cloves, drained white beans, drained pink beans, diced green chilies, whole kernel corn, chicken broth, minced jalapeno pepper, cumin, chili powder, salt and pepper.
