Feed Your Family with Easy Chicken Recipes

It cooks much faster than many other types of meats.

You can prepare it in so many ways whether you want to bake, fry, boil, smoke, or grill it. As long as you follow the directions and make sure that the meat is well done, you can enjoy a healthy meal with your family. You will need several ingredients to prepare this dish. However, you might have many of them already at home in the kitchen or pantry. You can always change it up a bit to suit your tastes. For instance, you may or may not want to include the jalapeno peppers. It is just fine to take out or put in just about any ingredient that you prefer while you are cooking chicken. Ingredients –





  • ½ cup processed cashews
  • 2 cups plain yogurt
  • 1 cup chopped onion
  • ¼ cup lemon juice
  • 2 tablespoons chopped fresh ginger
  • 2 seeded jalapeño peppers
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon cloves
  • ¾ teaspoon cinnamon
  • ¾ teaspoon cardamom
  • 2 ½ teaspoons coriander
  • 2 teaspoons vegetable oil
  • 6 boneless skinless chicken breasts
  • 1 cup cubed pineapple
  • 2 tablespoons chopped cashews
  • 2 tablespoons chopped cilantro

Preparation:

Add roasted cashews into a food processor and process about 3 minutes until smooth. Scrape the sides and then add the plain yogurt. Process for about a minute and then remove from processor. Set aside until needed.

Add the chopped onion, lemon juice, chopped fresh ginger and seeded jalapeño peppers in to the food processor and process until finely chopped.

Cut each boneless skinless chicken breast into thirds, cover, and set aside.

Using a large zipper sealed plastic food bag you will add the salt, pepper, cloves, cinnamon and cardamom. Shake well and then add the boneless skinless chicken breasts. Seal and shake to coat the meat with the spices.

Add the vegetable oil into a large skillet over medium high heat. Add the coated chicken and then cook for 4 minutes on each side or until the meat is done and no longer pinkish in color. Remove from heat, transfer to a plate, cover, and keep warm until needed.

Add the onion and jalapeno pepper mixture into the warm skillet over a medium heat. Cook for about 3 or 4 minutes. Stir frequently while evaporating the liquid. Add the yogurt mixture into the skillet and then cook for about 3 minutes or until heated through. Stir frequently to prevent scorching.

Add ½ cup yogurt mixture onto each plate. Arrange the chicken on top of the yogurt. Garnish with cubed pineapple, chopped cashews and chopped cilantro before serving.
