Ingredients –

  • 8 ounces boneless, skinless chicken breast
  • 1 medium eggplant
  • ˝ cup thinly sliced carrots
  • 2 large brown mushrooms, sliced
  • salt and pepper, to taste
  • 2 tablespoons sesame oil
  • 1 cup snow peas
  • ˝ cup peanuts (dry-roasted works best)
  • ˝ cup bean sprouts
  • 3 tablespoons diced pimientos
  • 1 tablespoon peanut butter (your choice of chunky or creamy)
  • ˝ cup hoisin sauce

Preparation:

Preheat the wok to high.

Cut the chicken into rectangular quarter-inch thick slices.

Wash the eggplant and trim the ends. Cut into 4 pieces lengthwise. As you cut the eggplant into half-inch pieces, discard dark green areas. Season the eggplant with pepper and salt.

Preheat wok on high for 2-3 minutes. Add the sesame oil and chicken. Turn the chicken occasionally to brown all sides. Sauté 5 minutes.

Place the eggplant and peanuts into the wok with the chicken. Stir, cover, and let sauté 4 minutes, stirring once each minute.

Add the pimentos and vegetables to the mix, stirring frequently while it sautés 2 minutes.

Combine the peanut butter and hoisin sauce in a large measuring cup. Add to the eggplant-chicken mixture, stirring to blend the flavors. Sauté an additional 2 minutes and serve.
