Peanut Sesame Chicken Linguini

Ingredients –

  • 12 oz linguini
  • 1 tablespoon red wine vinegar
  • 3 cloves minced garlic
  • 1 tablespoon brown sugar
  • 6 tablespoons chunky peanut butter
  • ¼ cup soy sauce
  • 3 tablespoons hot chili oil
  • 6 tablespoons sesame oil
  • 5 tablespoons toasted sesame seeds
  • 2 boneless, skinless cooked chicken breast halves
  • 3 scallions, white bulb, and 3 inch green, cut into 2-inch julienne
  • 1 large cucumber, halved, seeded and diced

Preparation:

  1. Cook the linguini.
  2. Drain, rinse, and set aside.
  3. Place the vinegar, garlic, peanut butter, brown sugar, and soy sauce in a food processor and blend for 1 minute, slowly adding the oils through the feed tube.
  4. Cut the chicken into 1-inch pieces and toss with the pasta.
  5. Add the sauce and 4 tablespoons of the sesame seeds.
  6. Toss to coat well.
  7. Place the linguine, chicken in a large serving bowl, and arrange the cucumber and scallions on top.
  8. Sprinkle with the remaining seeds and serve at room temperature.
